...then I have a great recipe for you all from good 'ol Lusiana. Chicken & Shrimp jambalayaINGREDIENTS: 3 to 4 pounds chicken pieces 1/4 cup olive oil (extra virgin is best) 1 green bell pepper, chopped 1 small red bell pepper, chopped 1/2 cup chopped onion 1 clove garlic, minced 1 1/2 cups long-grain rice, uncooked 2 teaspoons salt 1/2 cup tomato paste 1/4 teaspoon dried leaf thyme 1/4 teaspoon Tabasco sauce 3 cups water 1 diced fresh tomato 8 ounces shrimp (headless/pealed fresh or frozen) PREPARATION: Brown chicken pieces in hot olive oil over medium heat. Remove chicken from oil. Drain off all but 1 to 2 tablespoons of oil. Cook bell pepper, onion, garlic, and rice over low heat, stirring often, until tender. Add seasonings, water, and chicken. Bring mixture to a boil; add any remaining ingredients and cover and cook over low heat for 25 minutes, until rice is tender. Remove cover and fluff rice. Stir in shrimp and diced tomatoes and cook for about 5 minutes longer, until heated through. Jambalaya recipe serves 6. ;D If you all like this sort of post just let me know and I will give you my recipe for Crawfish Pie.

Sure looks tasty (< That's supposed to be me licking my lips ) I am not much of a cook, but I can sure cook good if I am motivated to. I guess I could try it out sometime.

That's what I had for dinner last night. My favorite cajun dish is Crawfish pie though. It's almost like a jambalaya (but with crawfish) stuffed inside a pie shell. Very tasty. Now I want some.

Great, you had to mention crayfish didn't ya Kgiveans? I haven't had any of them since the 80s when I delivered down there in Louisanna. And if I was in Houston, I always made sure I returned back home by going thru La. just for that reason.... I loves them crayfish. ;D But I don't miss those long hauls.

Can't say I blame you. I know that when I move from Louisiana I will miss the seafood and mostly the Crawfish but I won't drive all the way back to get any. I may have some shipped to me though.
